A guide to Haifa — the city that climbs the sea

Haifa doesn't rush at you. It layers — a port at sea level, a colony of pale stone houses walking up the slope, terrace after terrace of Baháʼí gardens, and finally the Carmel mountain looking down at the Mediterranean like it owns the view. Three days is enough to know it. Five will spoil you. We live here. What follows is what we'd tell a good friend who called Tuesday saying they land Friday.

The main attractions

The Baháʼí Gardens are the postcard for a reason — nineteen terraces climb the Carmel in a single geometric breath. Book the free English tour at 12:00 from the top (Yefe Nof), or walk down from the German Colony on your own at golden hour. Stella Maris up on the ridge gives you the widest view of the bay. And if you have three hours, take the Wadi Nisnas art walk — Arab-Jewish market by day, painted alleys by night.

Come hungry

Falafel HaZkenim is the argument — Wadi Nisnas since 1950, no menu, no seats, no debate. For sit-down: Ein el-Wadi for Palestinian farm cooking, Fattoush on the German Colony for a slower evening, Isabel on Ben Gurion for the chef-y end of Haifa's new wave. Baguette bakery Douzan opens at 5am on weekends if you're on cruise-early time.

Raise the bar

Ben Gurion Boulevard runs the length of the German Colony and turns into an open-air living room after dark. Sit at Tishbi wine bar under the ficus tree, or walk two blocks up to Douzan for arak with mezze. If you want something quieter, the roof of Bat Galim Surf House looks straight at the container terminal — brutalist, oddly beautiful, cheap arak.

Small humans, big day out

The MadaTech science museum inside the old Technion building is one of the best in the country — three floors, none of it phoned-in. Then take the cable car down to Bat Galim for the beach: gentle waves, actual shade, and a promenade with bikes for rent. Skip the zoo in summer heat — go early morning or not at all.
