Palestinian farm cooking in a tiled courtyard. The tabbouleh here is the argument — nobody else in the city touches it. Come at 1pm on a Friday, order the mixed grill, drink the arak. Cash preferred.

Fattoush · German Colony

The one on Ben Gurion that turned twenty last year and still looks like it opened yesterday. Rooftop terrace, the fig-tree corner, mezze that keeps arriving until you say stop. Best sunset seat in the colony.

A wine bar disguised as a bakery. Or the other way around. Their Lebanese-lens wine list is the most interesting in the city — the owner will pour you something you've never heard of. Late kitchen.

Falafel HaZkenim · Wadi Nisnas

Not really a table — you stand or you sit on a plastic stool. But this is Haifa's falafel. Been there since 1950, no menu, no seats worth mentioning, no debate. Bring your appetite and cash.
